Olive heartwood has a creamy colouration, sometimes light yellow or pale browns with darker streaking running within the grain. The colour darkens with age or when oiled. Olive wood is a good choice of knife handle material because it's easy to work with, beautiful to look at, and makes the blade almost 'pop' out due to the difference in contrast. Olive trees are some of the oldest living trees known, and because they are rarely used for timber, they are often left to grow into their full potential. Most timber used from olive trees comes from storm damage.
