Bought Stainless Steel to be used for food prep. Typical Opinel blade, sharp from the start. Had an issue with the pivot being too tight and found it difficult to open the blade. This happens when the wooden handle gets wet. It absorbs water and expands. So I soaked the knife in a small tub of (food grade) mineral oil for 2 days. Now there's no problem opening the blade and the handle won't absorb so much water. All good!

Generally an OK knife, takes a good edge and keeps it for a reasonable amount of use, my biggest issue is the tip of my knife bent as I was cutting thick hemp rope. Luckily this was easily sorted with a few taps of the hammer. The only other thing I've found is the lock ring can be push down the handle if the blade is stuck and you are trying to release it. But for the money a good sharp knife you don't mind using and abusing.
